I am Andrés Felipe Otálvaro, a culinary entrepreneur from Medellín, Colombia, with more than 10 years of experience in rice dishes, specializing in paella. Through my catering brand, Andrés Paellas, I seek to cross borders by bringing Colombian flavors, ingredients, and identity to every preparation.

Paella has been at the heart of my travels, experiences, and participation in festivals and culinary events around the world, where I have had the opportunity to share my approach and my passion for cooking.

I have studied culinary arts, physical therapy, and assistance dog training, experiences that have enriched my perspective, discipline, and understanding of gastronomy.
